Recipe for Spicy Salsa

Easy to make, no cook recipe for a Basic Salsa
(Alternatively it can also be used as a base for Guacamole or Mango salsa)


Ingredients (serves 2-3 pax)
1 small onion
3 small tomatoes
1 teaspoon of olive oil
1 teaspoon of Balsamic Vinegar
Dash of Salt & Pepper
Sprinkle of lime juice
1/2 of a yellow pepper (may be replaced with 1 whole avocado or 1/2 a mango)
Some finely chopped parsley
1 bag of Tortilla Chips (Organic for a healthier choice)

Steps
1. Finely dice onion, peppers and 1 tomato. Drain any access liquids and place them in a bowl.
2. Using a fork, mash the other 2 tomatoes till it is is chunky & almost soluble.
3. Add the diced ingredients to the soluble tomatoes and mix.
4. Add a dash of salt & pepper with lime juice, toss mixture.
5. Finally add 1 teaspoon of olive oil & balsamic vinegar. Mix well.
Add parsley for taste and serve with a side of Tortilla chips. Best eaten as a refreshing appetizer, preferably if main course is fish.

This year for Halloween, it was a rather quiet one. Halloween's eve called for some home cooked dinner made by Mother & I. It was a rather healthy dinner - My salsa dip for appetizer, Pan seared Salmon with broccoli cheese on the side, Cream of clam soup & Mash potatoes. What did you do for Halloween this year?
